Yes, people really do win. I enter sweepstakes all the time. I found a site called SweepsAdvantage.com where they list them all so I can enter a lot at once. On the entry forms, there’s usually a box you can check that says something like "don’t contact me with offers". Check the box if you don’t want the junk email. I have won cameras, gift cards, t-shirts, small appliances and all kinds of good stuff.

Having said that, I do advise my readers to enter with a free or disposable address. Some sites want you to sign up for emails (you can unsubscribe later), but as long as you stick with reputable sites, you won’t have a scamming problem.
